Fried chicken/ tofu chunks (no eggs)

This is one of Anjalie's favourite snack/dinner entrée. It can be a healthy snack or part of a dinner for children. Since it is finger food, it can double as party food too. This recipe avoids using eggs and is suitable for children who are allergic to eggs.

You will need:
2 chicken breasts/1 pack of Tofu, cut into bite size chunks
1/4 cup all purpose/plain flour
1 packet Breadcrumbs (200 gms)
salt and black pepper to taste
oregano/curry powder (any other spice that takes your fancy!)
2 cloves of garlic minced (optional)
100 ml of veggie/chicken stock/water to make batter
Oil for deep frying



Clean and wash the chicken. If using Tofu, rinse in cold water. Season the chicken/Tofu with garlic, salt and pepper. Set aside. Season breadcrumbs with salt, pepper and spice of your choice. Mix all purpose flour, salt, pepper with stock and/or water to make into a slightly thick batter. Heat oil in a sauce pan for deep frying. When oil is hot ( a drop of the batter should rise to the top immediately), dip the chicken in the batter, roll it on the bread crumbs and fry in medium heat until golden brown. Serve with ketchup or any dipping sauce of choice. It makes a healthy snack by itself or as part of dinner.
