Sweet peppers/Apple Quesadilla

This is a great recipe that is flexible and really yummy. Most of all it is easy to make and  the whole family can enjoy it. It is sure to be a big hit with children.


To make one quesadilla you will need:
2 flour tortillas
butter/spread
1/2 cup grated mild cheese
1 sweet pepper chopped finely or 1 apple skinned, cored and finely chopped
yogurt or sour cream to use as a dip





Heat up the tortillas for 10-15 seconds each in the microwave. Spread butter or margarine on one side of both the tortillas. Lightly grease a baking sheet and place one of the tortillas with the non-buttered side down. Fill the buttered side with 3/4 of the cheese and sweet pepper or apple and cover with the other tortilla with buttered side down. Top the quesadilla with the remaining cheese. Preheat the oven to 150 degree Celsius or 300 degree Fahrenheit and cook the quesadilla for 20 mins until the cheese is fully melted. Cut into desired shapes and enjoy with your dip of choice.

You can use pineapples, pears, chicken or any other filling for a variety in the quesadilla.
