Mild veggie chili

Veggie chili is a great way to make our little ones eat vegetables that can be tasty, and with adults enjoying this along with them, it can make them feel very grown up! :) It is easy to make as well. All we need to do is just throw them all together in the pot and let it cook. It can be part of a healthy meal for the whole family when served with rice and salad.



You will need:
1/2 onion chopped finely
4 tomatoes chopped (or 1/2 can tomatoes)
celery stalk chopped finely (optional)
garlic and ginger paste
1 cup of mixed veggies like, sweet pepper, zucchini, aubergine, cauliflower, garden peas, carrots (any thing your toddler likes)
1 can red kidney beans or pinto beans drained and rinsed
salt and black pepper to taste
dried oregano (optional)
1/4 tsp ground cumin
1 tbsp of butter
rice or baked potato to serve


Melt butter in a sauce pan and saute onions for 3 mins until transparent. Add celery (if using) and tomatoes and cook for another 3 mins. Add ginger and garlic paste and the veggies and beans. Add cumin, oregano, salt and pepper. Stir well to mix together. Cook until the beans are tender (at least for 20 mins). Add extra water if necessary. If using a pressure cooker you will need to cook at least for 6 mins. Serve warm with rice or baked potato. If your toddler likes cheese, add grated cheese before serving.

PS: Please avoid red beans (unless previously tested to be safe) if your toddler has allergy to nuts!
