This is another of my childhood favourite. I used to eagerly wait for my dad to come home from work because he used buy these on the way as a treat some times. However I have made a slight change in the flour mix from rice flour (which is traditionally used) to all purpose flour so that the pokodas would be softer for toddlers to eat (rather than the cripsy version).
Besan flour(chickpea flour)- 1 cup
all purpose flour- 2 table spoon
Turmeric powder- a pinch
Veggies all chopped fine: Potato, cauliflower, onions, sweet peppers, Paneer (optional)
Salt to taste
Salt to taste
oil- for deep frying
3 tbsp water for kneading
Mix besan flour, all purpose flour, tumeric powder, veggies and salt into a bowl. Add water and knead it into a slightly soft dough. The mixture should stick together when pressed. Heat the oil in a deep frying pan, take chunks of the dough and drop them into the oil one at a time. When it turns golden brown, turn over and fry the other side. Drain into a paper towel and serve warm.
This goes really well with ketchup.
