Veggie grilled cheese

 Anything to do with bread makes for a easy kid-pleasing food. Add some cheese to the setting it will soon become a hit with everyone. The grilled cheese is sure to be a hit with children and can be a quick snack or part of a meal (lunch/dinner) when thrown in with refried beans and salad. It can even make a savory breakfast for a change!

You will need:
2 Wholemeal bread slices
slice of mild cheese
vegetable mix - sweet peppers, onions, tomatoes (made into small cubes).
butter or spread

Preheat skillet over medium heat. Spread butter or margarine on one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add the cheese and veggies. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Remove the crusts and cut it into toddler's favourite shapes using a cookie cutter.
